Mole is on of the most traditional Mexican sauces for meat. Red Mole is made with a combination of red chiles and a touch of Mexican chocolate. Green Mole is made with a combination of green chiles and pumpkin seeds (The chocolate and pumpkin seeds neutralizes the spiciness.)
